Spanish omelette recipe


  • 2 tablespoons of olive oil
  • 450 g potato
  • 8 eggs
  • 1 red pepper for tomato paste
  • 1 onion
  • Salt
  • Freshly ground black pepper
  • 2 bunches of chopped parsley
  • 1 teaspoon hot sauce


Preparation of:

  1. Set the oven to 180 degrees.
  2. Chop the onion into small pieces.
  3. Peel and slice the potatoes into thin round slices.
  4. Remove the seeds from the pepper and cut into thin strips.
  5. Add olive oil to the cast iron pan and leave it to heat over medium heat.
  6. Add potatoes, peppers, onions, salt and pepper.
  7. Cook, stirring, for about 15 minutes until the potatoes are soft.
  8. Beat the eggs in a bowl.
  9. Add hot sauce, chopped parsley, salt, black pepper and mix.
  10. Spread the mixture over the vegetables in the pan.
  11. Place the pan in the oven and bake for about 12-16 minutes until firm.
  12. Transfer to a serving plate with the help of a spatula.
  13. Drizzle lightly with olive oil and sprinkle with chopped parsley.
