Spanish omelette recipe


  • 2 tablespoons of olive oil
  • 450 g potatoes
  • 8 eggs
  • 1 stick of red pepper
  • 1 onion
  • Salt
  • Freshly ground black pepper
  • 2 bunches chopped parsley
  • 1 teaspoon hot sauce


Preparation of:

  1. Set the oven to 180 degrees.
  2. Chop the onion into white pieces.
  3. Peel the potatoes and slice them thinly into round shapes.
  4. Clean the seeds of the pepper and chop it into thin strips.
  5. Add olive oil to the cast iron pan and let it heat over medium heat.
  6. Add potatoes, peppers, onions, salt and pepper.
  7. Cook, stirring, until the potatoes are soft, about 15 minutes.
  8. Beat the eggs in a bowl.
  9. Add hot sauce, chopped parsley, salt, black pepper and mix.
  10. Spread the mixture over the vegetables in the pan.
  11. Place the pan in the oven and bake until set, approximately 12-16 minutes.
  12. Transfer it to a serving plate with the help of a spatula.
  13. Drizzle lightly with olive oil and sprinkle chopped parsley.
