Materials

  •  1 turkey (5 kg)
  • 1 onion
  • 1 carrot
  • 1 celery
  • 2 bay leaves
  • 8 cloves of garlic
  • 2 tablespoons of butter

For the sauce

  • 2 tablespoons soy sauce
  • 2 tablespoons olive oil
  • Half a tea glass of honey
  • 3 tablespoons of pepper paste
  • 2 sprigs of fresh thyme
  • 8 cloves of garlic

For the inner pilaf

  • 500 g rice
  • 2 onions
  • 60 g lamb liver
  • 10 g bell pistachio
  • 120 g butter
  • 1 tablespoon cinnamon
  • 1 tablespoon of granulated sugar
  • Salt
  • Black Pepper

How to Make

  1. Boil the turkey in a large pot with plenty of water, chopped onion, carrot, celery and bay leaf for 2 hours.
  2. Put the turkey on a large plate and reserve the water. Mix the ingredients for the sauce in a bowl.
  3. Spread the sauce all over and inside the boiled turkey. Place the garlic cloves and a piece of butter inside the skin of the turkey.
  4. For the pilaf, soak the rice in warm water for 30 minutes and wash it. Add the dice-sized chopped liver into the pot. Add the bell pistachios.
  5. After roasting for 1-2 minutes, add the chopped onions. When the color of the onion starts to change, add the rice. After roasting for another 7-8 minutes, add the spices.
  6. Add turkey broth and cook over low heat for 10 minutes. Turn off the heat and leave to infuse. Add the chestnuts you cooked in the oven and stuff them into the turkey. Bake in a preheated 190 degree oven for 3 hours covered. After removing from the oven, let it rest for 15-20 minutes.
