Materials:
- For the dough
- 1 glass of water
- 1 cup flour
- 3 eggs
- 125 g margarine
- For the cream
- 2.5 cups of milk
- 1 egg
- 1 water glass of granulated sugar
- 2 pieces of mastic gum
- 4 tablespoons of flour
- 1 tablespoon margarine
- 1 packet of vanilla
- For the top
- Chocolate sauce
Preparation of:
- For the dough, put water and margarine in a pot and let them melt.
- Add the flour all at once, mix well and cook for a few minutes.
- Remove from the stove, wait 5 minutes, then add the eggs one by one and beat with a mixer.
- Fill the dough into a squeeze bag and squeeze it in pieces, spaced apart, onto a tray lined with baking paper.
- Bake in the oven at 190 degrees until golden brown.
- Turn off the oven and leave it to cool without opening the door.
- For the cream, put milk, sugar, egg, vanilla and flour in a pot and mix well.
- Crush the mastic gum into powder and add it to the mixture.
- Stir over medium heat until it thickens.
- Remove from the stove, add the margarine and stir until it melts.
- Let it cool, stirring occasionally.
- Transfer the cream to a flat and long-nozzled piping bag and fill it by dipping it under the profiterole balls.
- Serve with chocolate sauce on top.
